However, in a nation—and an area—that takes great pleasure in its past, there is a secret house that is very old and impossibly perched at the nexus of nature and society. Based on archeological evidence, the Romans farmed this land 2,600 years ago for wheat, olive oil, and wine above all else. They were drawn to the site by the uncommon and exceptional mix of clean springs and distinctive subsurface clay. The springs here have never run dry, and a statue of the legendary water goddess Ondine guards them to this day.
